Carlsbad Hotels & Restaurants Unveil Spring Dish & Drinks Inspired by Carlsbad Flower Fields

The opening of the iconic Flower Fields at Carlsbad Ranch on March 1 and the annual burst of color nestled along the nearly 50 acres of Giant Tecolote Ranunculus fields is one of nature’s official ways of announcing the arrival of spring in Southern California.

The neighboring Westin Carlsbad Resort & SpaSheraton Carlsbad Resort & Spa and the Cassara Carlsbad, Tapestry Collection by Hilton (which is perched on the edge of the fields) have the perfect view from which to experience the springtime magic.

Drawing inspiration from the colorful ranunculus blossoms, mixologist Stephen George has crafted two springtime drinks to welcome the season and the famous blooms as part of the annual Pedal 2 Petal – a celebration of fine flowers, experiences, food and drink in the city of Carlsbad from March 1 – May 8 (Mother’s Day).

Stop by before or after a visit to the Flower Fields to sip on a Lavender Blossom Fizz or Hibiscus Sour and nibble on a refreshing Hibiscus Baja Ceviche.

The Lavender Blossom Fizz features Venom Vodka, lavender-infused syrup, lemon juice, topped sparkling wine, and orange blossom water spritz. The Hibiscus Sour is made with CaliFino Blanco Tequila, grapefruit juice, aquafaba, a splash of lemon juice, agave nectar, bitter-hibiscus syrup, and garnished with a lemon twist.

Executive Chef Julian Quinones has also created the Hibiscus Baja Ceviche which features local Striped Bass, avocado, cucumber, citrus, tomato, plantain chips, and hibiscus.

The cocktails and ceviche will be available at 20|Twenty located at the Westin Carlsbad Resort & Spa throughout the flower fields season. The Hibiscus Sour can also be enjoyed in the lobby bar of the Cassara Carlsbad which directly overlooks the colorful fields.
